Why not?!

Good Question:  Why do School lunches kinda...well...suck?!

We all get stuck in a rut sometimes preparing the same old thing, day in-day out.  

It doesn't have to be that way and with Chef BQ Culinary, you can learn to better utilize your USDA Federal Commodities, creating exciting meals kids will love.   To the left is a Chicken and Rice dish with Olives and Lemons called "Tajine."  It is a very popular dish along the North African coast and comes in many variations. 

At Chef BQ Culinary we bring 'Fresh Eyes' to your kitchen and teach you how to combine ingredients to create exotic foods and comfort foods normally found only at Food Carts or Specialty Chains.  

At Chef BQ Culinary  we respect the stewardship entrusted to us with taxpayer dollars to best utilize our food supplies and minimize waste.  A great lesson to learn at Lunch!

Posole with traditional sides

Posole' is a traditional dish from Mexico and Central America. It incorporates whole grain Hominy corn, USDA commodity Pork, New Mexico Red Chiles and a rich Chicken Broth. Top it with 'Fun Stuff' like sliced Radishes, Green Onions, Cilantro, a Lime sqeeze and crumbled Tortilla Chips. Que Rico!

Quality Ingredients

We start with USDA Commodity based items like Beans, Rice and Noodles, then combine some fresh vegetables, protein and fruit. Next we add the 'Fun Stuff!'

Fresh Minced Garlic, Lime Wedges, Grated Ginger, Basil Pesto, Aioli, Hummus, Curry Seasonings, local Hazelnuts, Berries...and more!

Following State and Federal Nutritional Guidelines, your children are guaranteed a healthy and flavorful meal. 

Child-Parent-School Collaboration

Let's work together to create delicious meals that our customers want, parents appreciate and the school can afford to make.  

So, how does this actually work?

Evaluate:  We come to observe, listen and determine the needs of the District.  

Inventory:  What do we have to work with?  Let's use our USDA Federal Commodities (FREE is a good word!) and Local Suppliers.  

Create and Taste-Test:  Prepare recipes that students will like and get their input by sampling with them.  

Staff Training:  We train Kitchen Managers, then KMs train their cooks.  Written recipes, photos and videos combine with hands-on preparation.   We make recommendations on any small wares that would create efficiencies.  

Roll Out:  Kitchen Managers and their staff roll out meals according to the District menu.  We follow-up with Satisfaction Surveys of students, parents and kitchen staff with New Meal Tracking from Production Records.

Seasonal, Local and Diverse Ingredients make the Difference

How about an Oregon Blueberry Muffin or slice of Cranberry Hazelnut Bread to start your day? 

Oregon growers harvest and freeze Blueberries, Blackberries, and Strawberries for use in meals year-round. 

Oregon is still a leader in Hazelnut production and West Coast Cranberries.  

Using 'Farm-to-School' Grants from the government, Oregon School districts can spend their food dollars on locally raised Beef and Pork, as well.

That keeps generational ranchers and farmers in business. 

 

That's a win for all Oregonians.

Getting Hungry?
Good, the Proof is on the Plate.

The Chicken Mole' dish to the left incorporates USDA Commodity Rice and Chicken which lowers the food cost to around $0.60 per serving.  Those are some tasty numbers!
